Aburaage is cooked in sweet soy sauce to create inari sushi. The aburaage absorbs the sweet soy sauce at this point, so it is simmered until most of the liquid has gone. No problem! Simply dab your hands in a little bit of water and make small balls of rice to stuff your tofu skins. Don’t overstuff I can’t emphasize enough that it’s important to use rice vinegar, not other types of vinegar you may have in the pantry. Rice vinegar is a lot milder than the other kinds of vinegar. And once you fry them, then simmer them in your favorite sauce later, they soak up so much more flavor than plain tofu does! This dish is perfect for vegetarians and vegans who enjoy Japanese cuisine. Blanch the aburaage in a boilin gwater to remove the (factory) oil for a cleaner taste. Drain well. I recommend only making as many as you can eat in one sitting, as inari that are refrigerated overnight are usually hard and dry.

Thanks for the reply. The Sushi Chef I worked with used to make this with rice but also included red bean paste or sesame seeds. at times….so good! Also, he was from Kyoto! To go a little deeper on this Japanese inspired rice classic, Kyodoryori Story states that, “Inari sushi is said to have its origin in the beginning of 19th Century, when people made sushi by stuffing rice in the deep-fried tofu offered to the Oinari san.” ( SOURCE) Kakushi aji is the secret flavour which enhances the entire flavour. For this recipe, Kakushi Aji is “MISO paste”. You will not notice the miso because it is not the dominant flavour but it enhances the fragrance and enriches the flavour as a whole.Did you know that Inari sushi might be the easiest sushi to make? Yes, you read that right! Besides cooking rice, the most work you’ll ever do is seasoning the aburaage. T Once you’re happy with how well the tofu is seasoned (you can leave it for longer than 10 mins, if you desire more flavor), it’s time to remove the aburaage from the pot again. Again, you need to lightly press any excess liquid out of the aburaage, or it’s going to be too watery to make tofu musubi rolls that don’t fall apart!
